Ok, so who doesn't like comfort food? One of my favorite comfort foods is Mac&Cheese. Usually mac&cheese comes with tons of calories. I am a Instagram user and I follow a lot of people that post about fitness and nutrition. One of my favorite people to follow is feelgoodfoodie, she posted a recipe for "Skinny Mac N Cheese". I had to try it, so my husband and I just made it last night and it was to die for! It took less than a half hour. Along with the recipe, feelgoodfoodie also mentions "comfort food without the need for your comfort pants afterwards". It's true!
Recipe:
Ingredients:
8oz. whole wheat elbow pasta
2tsp. olive oil
1/4 cup whole wheat panko bread crumbs
1 cup shredded cheddar cheese
1/2 cup plain greek yogurt
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp dry mustard
Instructions:
Cook the pasta according to package instructions until al dente. While the pasta is cooking, heat the olive oil in a small pan and cook the breadcrumbs until they are toasted with a light brow color, then set aside. When pasta is cooked, drain and reserve about 1/2 cup pasta water, then return pasta to the pot along with the pasta water. Stir in the cheese until melted, then greek yogurt, onion powder, garlic powder, mustard and s/p to taste. Once it looks smooth and creamy, top with the toasted breadcrumbs!
Mac and Cheese is one of my favorite homemade dishes and to see this post was very nice. I can't believe that there is a mac and cheese recipe out there that is healthy. Thank you for sharing! :P
