I love banana bread, but every banana bread I have had is usually not very good for you. Once again another great recipe came up on my Instagram feed! I follow yourhealthyworld, I highly recommend following. This recipe turned out so well for me and it even satisfied my sweet tooth!
Healthy Peanut Butter Banana Bread:
Recipe:
1 cup of whole wheat flour
1 ripe banana
1/2 cup of all natural peanut butter
1/4 cup of coconut oil (melted)
2 eggs
1tsp of baking powder
1/4 cup honey
1/2 cup stevia
1 tsp of vanilla extract
Optional: 1 tbsp of chia seeds
1. Preheat oven to 350 degrees F and line an 8x8 pan with parchment paper.
2. In a large bowl, combine all dry ingredients and combine wet ingredients into a second bowl. Slowly pour the wet ingredients into the dry ingredients and mix until smooth.
3. Pour Mixture into prepared pan and back for 20-25 minutes until squares are set. Allow to cool before cutting into squares.
Top with additional peanut butter!

Skinny Mac N Cheese
Ok, so who doesn't like comfort food? One of my favorite comfort foods is Mac&Cheese. Usually mac&cheese comes with tons of calories. I am a Instagram user and I follow a lot of people that post about fitness and nutrition. One of my favorite people to follow is feelgoodfoodie, she posted a recipe for "Skinny Mac N Cheese". I had to try it, so my husband and I just made it last night and it was to die for! It took less than a half hour. Along with the recipe, feelgoodfoodie also mentions "comfort food without the need for your comfort pants afterwards". It's true!
Recipe:
Ingredients:
8oz. whole wheat elbow pasta
2tsp. olive oil
1/4 cup whole wheat panko bread crumbs
1 cup shredded cheddar cheese
1/2 cup plain greek yogurt
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp dry mustard
Instructions:
Cook the pasta according to package instructions until al dente. While the pasta is cooking, heat the olive oil in a small pan and cook the breadcrumbs until they are toasted with a light brow color, then set aside. When pasta is cooked, drain and reserve about 1/2 cup pasta water, then return pasta to the pot along with the pasta water. Stir in the cheese until melted, then greek yogurt, onion powder, garlic powder, mustard and s/p to taste. Once it looks smooth and creamy, top with the toasted breadcrumbs!

Well here it is, my first blog post! I have quite the sweet tooth! On this healthy journey I make sure that I have healthy dessert alternatives. One of the recipes that I just tried is a "crust-less strawberry pie". This is so good, very easy to make, and a great summer dessert!
